Salmon Cakes

  • Two 5oz cans of wild caught salmon drained well
  • 1 egg
  • 1/4 cup fine ground pork rinds
  • 2 tbsp mayo
  • 2 tbsp finely diced red onion
  • 1/4 tsp garlic powder
  • 1/4 tsp chili powder
  • 1/4 tsp old bay seasoning
  • salt and pepper to taste
  • 1 tbsp olive oil

Instructions for Salmon Cakes:

  1. In large bowl mix salmon, egg, mayo, onion, pork rinds and seasonings
  2. Form patties with mixture (5-6 small patties)
  3. In a skillet, drizzle oil and cook patties over medium heat 4-5 minutes until each side is golden brown and crispy

Avocado Sauce

  • 1 avocado
  • 1/4 cup sour cream
  • 3 tbsp cilantro
  • 1-2 tbsp avocado oil or olive oil
  • juice of half lemon
  • salt, pepper to taste

Instructions:

  1. Blend all ingredients in a food processor until smooth, or mash together, tastes great either way.
  2. Service salmon cakes hot with avocado sauce
